Catfish in a Beer Bath I found this great recipe on the net. I love catfish anyway so I'm going to try this one. I haven't made it yet but I fully intend to when I catch some more catfish.
"Ingredients:
4 garlic cloves, finely chopped
2 green onions, sliced
3 T Butter
2 large Catfish fillets
1/3 c flour
4 mushrooms, stems removed, sliced
3 oz Beer, preferably a lager
1/2 lemon
Worcestershire sauce
rice, white, brown or wild
How to Prepare:
Cook finely-chopped garlic and onion in butter until tender, but not brown.
Lightly flour catfish. Add to pan with mushrooms. Pour in beer and squeeze the juice of the lemon onto the fillets. Add a few drops of Worcestershire.
Saute over medium heat, turning, until brown on both sides. Serve on hot plates with rice. Pour pan-gravy over the rice. "
I may have to go fishing tomorrow evening after work!
