The only underground cooking that I've done is in what the old timers called a bean hole. They work great for things like baked beans, stews and pot roasts. I dig a hole a little wider and deeper than the pot that I'm using and put whatever it is that I want to cook in my pot. Put a tight fitting cover on the pot and if you have it, lay a piece of aluminum foil over the top. Rake some coals into the bottom of the hole and set the pot in on top of them. Add more coals around the sides and on the top, pack dirt or sod on top of that and go do something else for the day. At dinner time, take your pot out of the bean hole, open it up and you've got a hot meal.
