How about something really easy like pudding cups or yogurt? They are already in their own little container and everything. Just throw them in the cooler!
Our desserts are usually made on over the fire. We make smores and bring pie fillings to make pies in the pie irons. I also bring some homemade cookies, but they are usually gone after the first night.
We make s'mores and banana boats too. I love them and so do the kids and they love to roast them over the fire. We also usually take brownies and other home baked goodies that we make before we go camping.
