When you barbecue do you use a dry rub or barbecue sauce? I think it's fun to mix it up and experiment with different things, but some people I know are die hards one way or another and refuse to think outside the box.

I usually go with a dry rub. I find it easy to tweak to your tastes, and tastes better. I will use some marinades however on some things, and will also brine some food.
I usually use both. I will use the dry rub beforehand letting it sit on the meat a few hours, then as I am cooking will put BBQ sauce on some of it. My kids don't like the sauce so I don't put it on everything.
smellslikedirt - I also do that sometimes too. When I'm in the mood for both and can't decide I'll put the rub on beforehand and then add some sauce toward the end of cooking.
Jason - I know Alton Brown swears by brining meats. I haven't gotten into that. Do you think it makes a considerable difference?
Cool. That's good to know, thanks I'm a big Alton fan and every year I see his Thanksgiving special where he insists that a turkey should be brined first. As much as I like him, I haven't tried it yet. But I will this year.
I love to take meats with me that are sitting in the marinade while we get to the campsite. By the time we usually make it they are just right after we get set up and get a fire going.
As far as barbecue, my bunch likes both. it just depends upon what we want for that day. I usually do the cooking at the campsite because my wife will get sick if she stays too close to the fire for too long.
We are the same way. We like to pre-marinade the meat we take camping and that way it is ready for eating when we are ready for it and full of flavour. And we do both liquid marinade and dry rubbing. They both have their own flavors and their own advantages. I think dry rubs work better if you have a shorter time between marinade and cooking.To me liquid marinades take longer on the meat before cooking to get the full flavour.

I will admit, I do not follow his instructions exactly. I like to add a lot of honey to it. I love the taste of honey though. I also do not always add all the spices or vegetable stock.
