Default Kettle Cooking

I went to an event once and they had what I think was called kettle cooking. They had potatoes and meat and other stuff that had been cooking all day and it was so yummy! Has anyone ever had food like this? Does anyone know how to cook it?

I use a Dutch Oven once in a while. It is like a Crock Pot. But I use it over the coals of the fire.
