Default Vegetarian grilling

As a vegetarian family it seems like we're always cooking the same stuff. We do grilled veggie pizzas, veggie quesadillas, pasta, veggie burgers, tofu, etc. I'm in the market for something different. Does anyone have any unique non-meat recipes?

Wash asparagus and cut off toughest portion.

Place in pyrex baking dish, drizzle with olive oil, sprinkle lightly with sea salt, and crush 1-2 cloves of garlic on top (optional).

Roast in grill for approximately 10 minutes for thin stalks, longer for thicker. Use tongs to stir once during roasting.

Can be served hot or cold, with or without grated cheese.

Funny you should mention that, Jason. I had grilled asparagus last night My husband threw some wood chips on the fire and they gave it a really tasty smokey flavor. Delicious!

Ok. I'm going to dig through my books and see what else I can find for you. It is supposed to rain all next week, so I might flood you with some recipes.

There was one I love doing during summer. I take corn on the cob and peel back the husk. Rub some flavored butter (usually mix in spices/herbs in melted butter), on the corn, pull the husk back up and roast on the grill.

Try this if you like cabbage. The one I just heard about had bacon in it, but you may substitute if needed I am sure. Not sure what would go well with it. But they cored the cabbage, put in about 1/3 cup of butter. They then put some bacon in the core. They wrapped it in tin foil and cooked it at 300 for about 1 & 1/2 hours.

I love to do corn with fresh herbs and olive oil. I'm not a big butter person so wherever a recipe calls for butter, if it's feasible, I substitute olive oil. The cabbage sounds great. I wonder if I could use veggie bacon instead of real bacon. Believe it or not, veggie bacon actually has the smokey flavor of real bacon. It trips my husband out every time he has it, lol.
