I like to make steaks when I am at a campfire. If you do it right they can be quite delicious. I stay away from chicken just because I do not think it is that safe. What are the best meats to cook on a campfire.

Everything cooks well over a campfire. It's just a matter of preference. I don't see a problem with cooking chicken outdoors. If you're concerned, pack a meat thermometer and just make sure it's at the recommended temperature before you pull it off.
For me, I prefer fish as the best meat for our campfire meal especially if it is grilled. Salmon, bass and tilapia meat would be included in my list of campfire menu.
fish is great, especially if you just caught it from the nearby lake. But anything that gets a smoke flavor to it tastes great. Even SPAM and Vienna sausages.
I tend to avoid chicken and pork for safety reasons, but beef and fish rock.
We usually have some of everything when we go camping although pork doesn't travel with us quite as often as beef and chicken. I am not a huge fan of fish but that's one of my husband's favorites.
I like to cook red meat over a campfire more then I do white. With the exception of fish of course. It's just my personal preference. I figure if it can't be killed in the wild, it shouldn't be eaten in the wild.
