Default Any Good Chilli or Soup Recipes?

We always like to start a simple chilli bean recipe of beans, chilli powder, onions and spices. We let this simmer for a long period of time.

That means that there is always something hot to eat. Also, anyone can eat when they get ready. Then we will just add something to it like a sandwich, chips or crackers if it is all eaten.

I really don't follow a recipe. You can blame my mom for that. She cooks by taste. It took a lot of begging to get her to actually try and write down some of our family recipes. But I'm getting off track.

I cook my chili a bit different. I know a lot of people use ground meat. I actually before small chucks. I will use a mixture of beef or pork, sometimes lamb but that is rare we have any. I cook it in batches, just browning the chucks and then moving them into a bowl after browning until all the meat is done. I then pour in some beer into the pot and use it to scrape off any pieces of meat that may have stuck to the pot and mix up any juices. Then add the meat back, along with some diced tomatoes (I usually buy them in the can diced, sometimes I get the ones with garlic or peppers), beans, chili powder, ground cumin, chipotle peppers, any other hot peppers I may have on hand. I will sometimes add a yellow or orange bell pepper for some color. After that I let it slow cook for a while and then I start tasting and adding any other further seasoning to taste.

That sounds good. I like to use groundbeef for my chilli, but when we are camping we usually have a meatless chilli. This is so we do not have to worry about the meat going bad. So we just use beans instead.
But, we just let it simmer all day.
