Oh sorry, wrong mullet. I mean the fish mullet.

Do you most use a cast net to get them?

salt water mullets are a real delicacy along the gulf coast. Being a fresh water guy I catch mullets with a cast net and sue them for bait, I have even buried a couple 5 gal buckets full under the compost pile. I have never caught the salt water ones for other than crab bait but some folks filet them out cut them thin and fry them up along the Mississippi coast its known as Biloxi bacon and a local favorite.
