There is no way you can make venison taste like beef. There is a taste to it that is really hard to mask. I've had meatballs cooked in sauce that didn't taste like the venison they were made from but I think that is because she mixed beef in with it. She rinsed the venison to get rid of some of the taste.

Venison is still my favorite meat. But it has to be cared for properly. Those scent glands have to be removed immediately after killing. (and don't dare cut into one) The deer needs to be killed before it starts running hard and fast. And the animal must be quickly bled out, cooled and hung in a cool place for curing. I've shot big old staggy bucks that have a neck as big as their body but if cared for quickly and properly they are still great eating. It isn't beef, it's even better.
