I hunted groundhog a lot as a kid back East. Woodchuck hunters can all shoot. We used to give them away to the farmers.

There not bad slow roasted with a barbecue sauce on them. I use apple in my barbecue sauce so it makes the sauce sweet. Makes the meat sweet too. Groundhogs are really clean meat. They are vegetarians and will skin your garden slick, if you don't shoot them first.
