Default First pot of chili

I made our first pot of chili today for the season. Yes it is still summer but I don't think Mother Nature knows that! I can't wait to eat it, smells so good! I added more spice to it this time. Are you a spicy chili fan or mild?

I made some chili this past week, but my husband had such terrible heartburn I won't use that recipe again. On a whim, I grabbed one of those seasoning packets at the grocery store and used it. I won't make that mistake again. It was way too irritating for him, and he likes hot stuff.

Just too hot for chili or pinto beans.

I can heartily recommend New Mexico chile powder, and lots of Worchestershire sauce. Liquid smoke and ristra chiles round out the taste. Multiple sources of heat are good to stretch out the flavor profile. Don't make it too hot though, some won't eat it. Serve chile without beans or risk ****ing off half the population. Serve chile with multiple types of picante, and hot sauce on the table for those that like things hot.

I was in a backyard chili cookoff last year with people that we very timid cooks. If you are not from Texas, or never learned from someone what chili is supposed to taste like, please do not be afraid to put some flavor in it.

I like mild chili, but it's too early in the year for me to make it. I like it just as it gets cool and becomes football weather.

I make a spicy and a mild. The mild for the wife and kids, the spicy for me. The problem is I like to use ghost peppers, but they are hard to dig out once the chili is done. So there may be one or two in there, and boy will those things upset your stomach for a few minutes.

I enjoy spicy chili. My daughter experiments with different recipes and they all seem pretty good to me. I'd like to attend a Texas chili cook off just to sample some.

I like my chile mild,actually hot but low to med hot. Too hot takes the taste away but it ain't chile if it doesn't have some heat to it.

Back during my Fort Irwin days in the Mojave desert, we would get out of the field and head into town (Barstow) to a place called the Chili Bowl. The location was used in final filming of the movie "Hair" (boy that's and old one!). Any how, they had a meal on the menu called the "Chili Size". it was an open face hamburger piled high with Chili, on the side you would get fresh cut onions, cheese and a bottle of Tabasco. Top this off with an ice cold Bud and I was in heaven! Man I'm getting hungry!!!

It's still too hot for chili for me. I like medium hot chili and will actually use more chili powder than my husband likes. He has trouble with his stomach so I kind of take things easy for his sake although I've heard that chilies can help stomach trouble. He says it's a myth though.
