Default BBQed Red Fish

I mentioned in the felleting fish thread that when we fillet Red fish we leave the skin and scales on. This holds the flesh together on the BBQ pit.IMG_1669.jpg I took 3 filettes and seasoned them with Cajun seasioning.IMG_1671 (1280x960).jpg I then set them on the pit with pourky da pig standing but. Peg said I was blowing smoke up pourkys but When half done i basted with a mix of butter lemon juice and beer.IMG_1674 (1280x960).jpgIMG_1690 (960x1280).jpg Hate to brag but Peg said it tasted like an orgasm in her mouth Don't tell her I told ya.

Jason the Reds and specs are really starting to move in, and turn on. Put a boat in the water anywhere in the southern marsh start fishing. Only time ya really need start a out board is to get back to da landing if the tide is running. 2 people fish 2 hours and limit out. Oh, and for the big red fish our limit is 5.

Cappy, I've never tasted red fish before, but if it's as good as Peg says it is, then I might just give it a try. We're usually flounder and salmon people here, but occasionally I'll try something else.

[B]We also do flounder. i do a simular bbqed flounder stuffed with lump crab meat thats pretty tasty as well. We live where we are between fresh and brackish water so we also do lots of fresh water fishes too.[B]Peg took the left over smoky fish flaked it and put it in scrambled eggs this morning. OOOOOHHHH MAMA was that good. it's one of our favorite camping breakfast.

Yeah, I hear they are doing good. One of my friends just caught an 18 pounder. Sadly with Sandy going through last week my chance to get out got canceled. A bit too windy out there. Was supposed to go out for grouper too before the season finished.
