| Breaded Rabbit Clean and cut the rabbit into quarters and remove the back straps. Cover the meat with salted water and soak in the refrigerator for a couple hours or more. Rinse and put the pieces in a kettle with a chopped medium sized onion and as much salt and pepper as you like. Add about twice the amount of water that it takes to cover the meat, put a lid on your kettle and simmer for an hour, or until It's tender, adding more water if needed. Take the meat out of the water and let it drain until It's cool enough to handle and pat it dry. Salt and pepper to taste. Roll the pieces in breadcrumbs, (I like Italian) dip them in egg, then roll in breadcrumbs again. Fry in margarine or oil until golden brown and enjoy. |

| Mmmmmmmmmmmmm, Buuuuuuggggzzzzzz Bunnnnnnnnnnnyyyyyyyyy! I love fried rabbit. We actually buy rabbit in the frozen foods section at our local Kroger. It's quite tasty made with gravy and biscuits. My wife gets it occasionally and surprises me with it. I'm always very appreciative. |
