Default Bringing home the Bacon

Anybody out there every kill their own hogs? We did when I was kid and you wouldn't believe the difference in the taste of fresh pork and what you get now. Unbelievable. We ground our own sausage, made our own cracklings and rendered our own lard. Those were hard times but good times as well.

We don't raise our own, but we buy one every year from my good friend who is a farmer, and use a terrific local butcher to cut and cure the meat. It has ruined me for pork from any other source. I can't stand beef from the grocery store either, for that matter. Someday I'd like to have a few acres to raise our own meat, but for now, I'm sure glad I know a few good farmers.

Around here there are a lot of "mobile butchers" who have the trucks and equipment to go right to the farm, kill and dress hogs and cattle. They then haul the carcass back to their shop for curing, cutting and wrapping. Nothing like real meat from people you can trust. I've been on both the selling and buying side so I know how it works. And it works great.

And yes Rayne, you get the lard too if you want it.

Nope - we are getting our first beef in a month or 2 but never killed a hog. I have been to many pig roasts though so I would say that counts. To be honest, I hate the pork at pig roasts - it taste off to me.

I've never raised my own meat, but these new details about "pink slime" and spraying with ammonia makes me think it's the only way to go. They're talking about red meat, but you never know what goes into anything that you buy from the grocery.

Hi...


We never made our own bacon, but years ago when the area was dotted with small dairy farms, many farmers had their own smoke houses...about the size of an outhouse.

And, accasionally one of them would overheat and burn down...!!

I never have but growing up I knew many people who did and I found it interesting to be on the other side of the fence. I helped a friends family out a few times and its not easy work!

We have never done it ourselves, but we have been invited to our very first "pig picking" next weekend. Some friends have bought a half a pig and are going to roast it or something. I think it will be fun!

The plant where I worked was in a very remote rural area so once a week our cost center had a group breakfast. Because we all scattered to different buildings each morning, the supervisor thought it good for our weekly roundtable to have food as well.

Another supervisor had been working as a reserve police officer in his home town and when the noose at work started tightening, decided to go full time police instead of driving the 60 miles to nowhere each day. So one morning we invited our policeman for his going away breakfast. Naturally he called it a pig party serving sausage, bacon and ham. No joke, our super actually advertised it that way. In return, the other super gave ours a gift as well, a copy of Carnegies " How to win friends and Influence people".

Yeah, I'm not going to lie. I'm jealous of that right there. We had a good butcher up in NY, and lots of good farmland around us where a lot of the farmers setup road side stands. Working on growing my own, but no room for pigs, cows, or much else other then chickens.
