Default Loaded Baked potato salad

I had this at a restaurant recently and it was so good I went hunting online for a recipe. The one I found was not quite the same, but it is still really good!

4 large Russet or Yukon Gold potatoes
1/4 cup mayonnaise
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup freshly chopped chives, divided
8 strips of bacon (6 for the salad and 2 for topping) cooked and crumbled
1 tsp black pepper
salt to taste


Directions:

In a small bowl, mix your mayonnaise and sour cream. Make sure the two are completely combined and then add half of the chives, cheese, and peppeer. Let the mixture sit in the fridge for a little while. Peel and cube your potatoes in to bite size pieces. Put in a large pot, cover with water, and boil until fork tender.

When the potatoes are ready drain and cool them. I usually run some cold water over mine. Combine the potatoes with the sour cream mixture and top with remaining bacon and chives.

This sounds really good! I may even have to give this one a try for dinner tonight if I can find some sour cream in the refrigerator.

Hi Greatoutdoors! Thanks for sharing your potato salad recipe. Can you give suggestions on what dressing to substitute for mayonnaise, aside from light one? A family member hates mayonnaise of any kind because of its sour taste.

Hi...


I recently bought some mayo made with olive oil which tasted fine (to me, anyway).

Yogurt might be another one...especially if thickened by leaving it unrefrigerated overnight in a fine strainer over a pot...(which also makes a good Greek-style dip with drained, grated cucumber; and garlic with lemon juice and zest added).

Starch is my favorite and this sounds amazing. You have found the way to butter me up, potatoes are my favorite! I would double up the chives myself and crush up the bacon but otherwise it sounds fab!

I used Yukon gold potatoes for the first time this past Christmas. We had some really great mashed potatoes with butter, sour cream, bacon and I must say they were some of the best we've ever had. I think it was the Yukons that made the difference.

Monde I am not sure what a good substitute for the mayonaise would be except for maybe yogurt. I hope the rest of you guys enjoy it. This is one of our favorites now.
