Default Nacho Chicken Casserole

We tried out a new chicken recipe this week and it was pretty good so I thought you guys might like it as well. The kids loved it and it was really easy. Here is the link if you are interested.

Thanks for sharing Southerngal! I am pretty sure that this one will end up being a hit around my house as well. Anything Mexican usually goes over well here.

Very similar to Chicken Enchelada cassarole, one of my families staples/favorites.

I love a new recipe any day of the week, now I just need to talk my husband into it. I wonder if I could make a mix of that and work it into some tacos. I think he might actually eat it (hes picky about cheese).

Sounds pretty good. I bet it would be good with burger or chicken. I'm going to try it with chicken first. I like that there really are not a lot of items that go into it. I have most already here.

This does sound really good but I'm like HikenHunter, I think I'll try it with hamburger meat. We're beef eaters in my family.

We tried it with chicken and it was really good. I think I might try it with ground beef next time though. I like recipes like this where you can change it up just a little and have a whole different meal.

I made it with chicken last night and everybody must have loved it because there were no leftovers. I used Rotel tomatoes instead of plain diced tomatoes though, and we topped it with sour cream.
