We do small fishing and crabbing but were not at the point of going out water skiing although thats one of the goal for the future. I want to finally get my own boat but what type of boat should I look for and how big a boat should I start with?

Unless you want to pay for moorage fees, you'll probably be looking at something in the 22 - 25 ft size, and trailerable.

And I can NOT encourage you enough to take a Power Squadron course, to learn basic navigation and such, it's full of some of the most useful information a boater can be in possession of.
