Default One better than another

I know some people stick with only smaller boats while others never mind a larger one. I have been okay on medium sized ones but I am thinking about a kayak, I can work a canoe so this should be similar right?

Similar, yes. But a kayak is more responsive to the paddle. My advice is to practice by taking the kayak around the edge of a calm lake keeping in the shallows.
