This basic recipe is one of my favorite ways to cook squirrel, rabbit, birds, and assorted other small game us Cajuns eat. Normally it would be cooked on a grate over a camp fire but since it rained 14 inches that day I did it on the stove and took some pictures. In this case I used chicken and I call the dish smothered. I think its from using so many onions ya smother the meat in them but Not sure one thing I know its delicous and one of my favorite black iron dishes,
