Best way to freeze fish

What is the best way to freeze fish? Occasionally we catch more fish than we care to eat at one time so how can I freeze them so we can have them later?

A vacuum packaging machine if you have one, is probably the best way to go. I don't own one , so I usually wrap any fish that I want to freeze in plastic wrap, and then again in aluminum foil. They stay pretty good like that for a reasonable amount of time. I have a friend that always freezes his fish in a container of water.

Make sure you gut the fish first because you don't want that stuff in there. Besides the tips that woodzman suggested, how about getting some butcher paper and wrapping the fish in it?

You can apply some salt on the fish after it was gutted to preserve it. This is very much applicable if you don't have a freezer or an ice box.
