Thumbprint cookies

I am planning to do cookies for Christmas gifts for a few of our friends so I am experimenting with some recipes. Found this one over the weekend and they are yummy!

Ingredients:
1 cup butter, softened
3/4 cup white sugar
3/4 cup corn syrup
1 egg
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 (11 ounce) package white chocolate chips
1 (1.4 ounce) bar chocolate covered English toffee, chopped
1 (4 ounce) jar maraschino cherries, halved


Directions:
Beat butter and 1/2 cup sugar in large bowl until well blended; stir in corn syrup, egg and vanilla. In a separate bowl, combine flour, cocoa and baking soda; gradually add this dry mixture to butter mixture. Blend well. Cover and refrigerate dough for 1 hour or until firm enough to handle.
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine remaining 1/4 cup sugar and cinnamon. Shape dough into 1 inch balls; roll each ball in sugar mixture and arrange on a cookie sheet. Using your thumb, make an indentation in center of each cookie.
Bake in a preheated 350 degrees F (175 degrees C) oven for 7 to 8 minutes or until just set.
Remove the cookies from the oven. If the indentation has grown indistinct, use the top of a spoon and press indentation in further. Immediately place 1 teaspoon white chips into each indentation. After several minutes, swirl the melted chips with a spoon. Top with toffee bits and maraschino cherry halves (if desired). Cool cookies on a wire rack.

I missed this recipe for these cookies some how but am glad that I am now finding it. These look like they would be really good! I'm going to print out the recipe and give them a try. Thanks. :)

These do sound good. I need a dessert to take to a party this weekend, and I think I am going to give these a try.

I make a thumbprint cookie, but it is a bit different from this one. It is rolled in crushed walnuts and has jam on top of it. You can use any kind of jam you like. We use grape and raspberry. These are my favorite Christmas cookies.

I think everyone in the house would flip if we used toffee, we have always used jam as well. Sometimes the ladies will do a baking party, everyone brings something a little different and we just experiment with what we have. Sometimes it turns out good and sometimes we just make a new batch.

We do ours in crushed walnuts as well. I am partial to apricot jam in mine.

One of the great things about thumbprint cookies is everyone can have their own favorite crushed outside and jam. Experiment with different combos, like crushed pecans and caramel. We are only limited by our imagination!

Those all sound like delicious combinations. I made snickerdoodles and gingerbread this year along with my homemade peanut brittle. The brittle didn't last very long at all, but then again it never does.
